Apple Cake (Pareve)

A delicious dessert for Rosh Hashanah, the Jewish New Year.

1 1/2 cup sifted flour
3/4 tsp. baking powder
1/4 tsp. salt
1 cup sugar
1 stick pareve margarine (or 1/2 cup oil)
1/4 cup apple juice
1 tsp. vanilla extract
Juice from one lemon
3 medium apples, peeled, quartered, cored and sliced about 1/8-inch thick
1/4 cup sugar mixed with 1 tsp. cinnamon
1/2 cup melted apricot jam

Stir together the flour, baking powder and salt. In another bowl, lightly cream the butter and sugar until just well combined. Add the flour mixture, the eggs, the extract and the lemon and apple juices; stir by hand until just combined. Spread the mixture into a well-greased cake pan, smooth the top. The batter should be stiff. Carefully place the apple slices, peeled side out, into the batter so that as much of the apple as possible shows. The apple slices should be tightly packed. Bake in a preheated 350° oven for 45 to 55 minutes or until a tester (or toothpick) comes out clean. Remove and allow to cool. When the cake has cooled, brush with the melted apricot jam. Allow to cool. Serves 6 to 8.
