Honey Cake
Honey cake is the traditional cake of the "Land of Milk and Honey." A must for Rosh Hashanah, the Jewish New Year, its sweetness symbolizes the wishes for a good year ahead.3 cups flour
2 1/4 tsp. baking powder
1 tsp. cinnamon
1/2tsp. allspice
1/2 tsp. ginger
1 cup coffee (or 2 tsp. instant coffee dissolved in 1 cup water)
3/4 cup sugar
4 eggs
1/4 cup vegetable oil
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)
1 cup honey
Stir together the flour, baking powder, baking soda and spices. In a separate bowl, beat the eggs until fluffy and gradually add sugar; beat in the oil and honey. Add the dry ingredients and the coffee alternately to the honey mixture. Stir until smooth after each addition. Stir in the nuts and raisins. Bake at 325° in a well-greased 9- x 13-inch baking pan for 45 to 50 minutes.
